Biryani for the brave

Occasionally — very occasionally — biryani is the exact perfect food for a midday meal. For me, this usually occurs as I’m wandering around town feeling a bit peckish, when suddenly I’m ambushed by the scent of nutmeg, cinnamon, cloves and cardamom wafting from a shop I happen to be passing.

This occurred most recently while strolling in the vicinity of Dagon Centre. My mind was set on Thai food, but aromatic tendrils of marinated mutton hooked me by the nose and yanked me into the nearest branch of the Kyet Shar Soon chain of biryani shops.

In Yangon, there is a certain amount of sameness from one biryani shop to the next, but there are some differences, mostly in the arenas of service, cleanliness and the amount of cooking oil used in food preparation.

Service is generally good: You order chicken, mutton or vegetarian, the lid is whisked off the appropriate aluminium pot, the food is scooped onto a plate and delivered to your table, and you’re ready to chow down.

Speaking of tiles, the only places you’re likely to find more ceramic flooring and walling than in a biryani shop are infirmaries, morgues and Chinese hotel rooms.
